The result is a moist brownie that you can slice and serve more easily. My grandchildren prefer these “Gammy Brownies.” I refrigerate them, which only seems to make them more fudgy.

I baked muffins with EVOO (I had no other oil but OO, and knew that was too strong). Yikes, it took over my zucchini muffins, it’s a learned lesson! I’ll see if I can turn them into bread pudding!? I’ve used cottage cheese before. Just use a stick blender to smooth it out. I’ve also used this for a sub for sour cream when I didn’t have any.
